Torrefaction is a form of controlled heat treatment that can be seen as a way to speed up the natural ageing present in wood that is decades old.

The process drives away the volatile oils, sugars and resins that would normally vacate the wood naturally over a very long period. This has the effect of making the wood very much more hydroscopic than new wood and therefore much more stable where the instrument may be subjected to extreme variations of temperature and humidity.
